TWO AUTHENTIC GRAPE TYPES
Located at the foot of the Caramulo and Buçaco hills and stretching to the cool Atlantic coast, Bairrada offers an exceptional terroir for sparkling wine grapes. The region’s mild, maritime climate and small vineyard plots thrive on two distinct soil types: clay-limestone and sandy. These soils leave their imprint on the flavour of the grapes, while the cool conditions ensure that Arinto and Bical consistently reach the perfect balance between sugar and acidity.
Arinto is known for its vibrant acidity and bright citrus notes, giving the wine structure and freshness. Bical, often called a “terroir magnet”, reflects the character of the soil with clarity, bringing a subtle salinity and depth that complete the blend’s harmonious profile.

Proudly Portuguese, it reveals two distinct expressions: when fully ripe, it yields rich, complex reds with firm tannins; when harvested early, it retains freshness and acidity, creating an elegant foundation for método clássico sparkling wines.
Mastering Baga demands skill and precision, knowing how to prune, train and harvest at just the right moment to avoid excess tannin while capturing the grape’s distinctive character.

More textured than a blanc de blancs, pairs beautifully with delicate Mediterranean dishes based on fish and white meats; mild, non-spiced specialities from Indian, Chinese, and African cuisines; and egg-based desserts.
